Pale Lager, 13° Plato, 5.7% ABV. Francouzská kooperace. Před několika měsíci jsme navštívili kamarády v pivovaru Brasserie Au Baron na francouzsko-belgické hranici a uvařili spolu saison inspirovaným českým pivem (Saison Bohémienne). Když ho přivezli představit do Prahy, chtěli jsme naopak uvařit ležák inspirovaný jejich tradičním Bière de Garde. Procento pšenice v sypání a chmel Strisselspalt z Francie v kombinaci s jednoduchým infuzním rmutováním daly vzniknout značně jinému ležáku, než běžně vaříme – hodně lehkému a jemnému s květinovými tóny a jemnou pěnou. Spolu s pivem, které jsme uvařili ve Francii, hezky demonstruje, jak lze různými způsoby spojit dva odlišné pivní světy.
French collaboration. Several months ago we visited our friends in Brasserie Au Baron on the French-Belgian border to brew a Czech-inspired saison. When they came to present it in Prague, we thought it might be fun to brew a Bière de Garde-inspired lager. A portion of wheat and French-grown Strisselspalt hops and a simple infusion mash schedule makes for a very different lager than we usually brew – nicely light, floral, and smooth with lower bitterness and a nice fluffy head. Side by side with the Saison Bohémienne we brewed together in France it nicely showcases what different approaches can be taken to marrying the two brewing worlds.
